Homemade cake faster than running to the store

One bowl cake recipes can make baking at home even easier than running to the store. The following recipe takes less than 10 minutes to whip up and clean up, and you can make it with an electric mixer or by hand.

 

ONE BOWL CHOCOLATE CAKE

 

3 oz. semi-sweet chocolate

6 tbsp. butter or margarine

3/4 cup sugar

2 eggs

1tsp. vanilla

1-1/4 cups flour, divided

1/2 tsp. baking soda

3/4 cup water

 

Chocolate Glaze

2 oz. semi-sweet chocolate

1 tbsp. butter or margarine

 

1 cup fresh berries (raspberries, strawberries, blueberries or a mix)

 

Preheat oven to 350. Grease and flour a 9-in. round baking pan. In a microwavable bowl combine the chocolate and butter and microwave on HIGH for about 2 min. or until butter is melted. Mix by hand until chocolate is completely melted. Add the sugar and mix vigorously until combined. Add the eggs and beat vigorously until blended. Add the vanilla and mix to combine. Add 1/4 cup flour and baking soda; mix to combine. Add the remaining flour alternately with the water, mixing to combine with each addition. Pour into the prepared pan.

Bake 30 min. or until toothpick inserted in the centre comes out clean. Cool 10 minutes and remove from pan. Cool completely on a wire rack. In a microwave bowl, combine the 2 oz. of chocolate and the butter. Microwave for 30 seconds or until the butter is melted. Mix to combine. Place the cake on a serving plate, drizzle the glaze over the top. You can refrigerate the cake at this point and decorate the top with the berries just before you serve it. Serves 6 to 8.
